A new restaurant has opened in Madrid that features interior design inspired by classical architecture, marble-studded interiors and a menu that only offers healthy dishes.

Called Rómola, the restaurant was designed by Andrés Jaque’s architectural studio and is named after the novel by George Eliot that is set during the Renaissance in Florence. Referencing classic history throughout, the restaurant has an access floor that is separated into two levels, creating separate, distinct spaces. The lowest level is set aside for sweet treats and snacks, and features folding glass panes and a large circular lamp, while the main, temple-shaped area is on the second floor. Angular marble pieces and a hanging garden can be seen overhead, and the seats are upholstered in a vibrant olive green, with finishes that include velvet and oak. On the ground floor, diners can sit in front of the kitchen fires.

As well as having a design based on classical architecture and art, the restaurant’s food offerings are unique, with a menu tailored to clean eating. The dishes were designed by executive chef Jorge Reina, who collaborated with Pronaf, a company that promotes education on healthy life habits and provided advice on ingredients, nutrients and caloric values of the dishes to the kitchen team. The menu is also completely free of fried foods and favours free-range meat and fish. “Rómola is the result of combining two concepts; the pleasure of enjoying food and taking care of oneself. The recipes are all low in calories, the menu includes a detailed calorie intake for each dish, and no added sugar, trans fat or refined oils is used,” Rómola said.

Open for breakfast, lunch and dinner, dishes include honeyed veal with pickled salad, vegetarian sobrasada and artichoke hummus tramezzino. “The customers love the concept so far, the feedback on social media is pretty good and they especially like the guilt-free aspect of eating here,” Tomás Galván, digital marketing manager of Rómola told Lonely Planet Travel News.
